Steak Poivre

So, here's the perfect steak recipe, courtesy of Tyler Florence, with some adjustments:

Take however many tenderloins you want and season them with (must be) fresh ground sea salt and pepper. You want to be really generous with the pepper. Completely cover the steaks, front and back. Preheat your oven to 350 degrees. Put a two count of olive oil in an iron skillet (it's important to use an iron skillet - the taste changes if you don't). Get the oil smoking. Turn it down just a little to medium-high and add the steaks. Use the kitchen timer and sear the steaks for a minute and a half to two minutes on each side (the difference between medium rare and medium ulitmately). Then put the steaks in the skillet in the oven for five minutes. They should come out perfect. You can also add fresh rosemary when you put the steaks in the oven - that tastes great.
What I like to do for accompianiment is: remove the steaks from the skillet and sautee fresh spinach in the steak juice. Yummy.
